Quillen Farms is a small, family owned and operated producer of Fullblood Wagyu beef. Our commitment to high quality Wagyu Cattle began humbly with a passion for steak and a desire to do something a little different. 

We believe great meat starts with great genetics. Our Fullblood operation seeks to honor the heritage of Wagyu, at Quillen Farms, our cattle are 100% Wagyu, never crossbred. Each animal is DNA-certified to show its direct lineage to its Japanese heritage and registered with the American Wagyu Association or Australian Wagyu Association. Our breeding program, based around the Australian EBV system, is specifically tailored to produce animals of size, good phenotype and superb meat quality.

 

To grade the quality of our meat we assess its marbling, the beautifully delicate lines of fat woven through our steaks that give it all of its rich flavor. Our Wagyu cannot be graded against other breeds of cattle. Wagyu fat is not your normal fat, full of Omega-3 and Omega-6 fatty acids, it has the same good monounsaturated fats you find in salmon. Its low melting point makes a meal an experience, a rich, silky texture that coats your mouth with every bite. 

 

Honoring the heritage of Wagyu, also means honoring the traditions of care - our herd is nurtured by the dedicated care of our family. We cultivate a stress-free environment and pay careful attention to the happiness of our herd. Our cattle are pasture-raised, naturally, with no added hormones or steroids, and no unnecessary antibiotic usage. The slow-feeding techniques used in our finishing program produce delicate, even marbling and allow for our cows to gain weight at a steady and natural pace. Our operation is dedicated to raising cattle the right way, we believe in a life well-eaten and we are willing to wait for the perfect steak.
